Angie’s Recipe of the Day:  Paleo Chocolate Marzipane Ice Cream

 

Ingredients

  • 2 cups coconut milk
  • 1 vanilla bean
  • 100 g (3 oz) dark chocolate (about 90%)(about one full dark chocolate bar)
  • 1 cup almond butter
  • 2 tbsp dark cocoa powder
  • 1/3 cup honey
  • 2 tbsp almond  extract

Directions:

Heat the coconut milk with the vanilla bean (split to two and deseeded) and boil it, then chop the chocolate for as tiny bits as you can and pour into coconut milk, stir and covered with a lid, let it sit for some time to chill. You can do this task ahead like the day before if you like.  If you do not have almond butter at hand, just grind them in a grinder/food processor to buttery smooth consistency.Place all the ingredients, the coconut-chocolate-vanilla milk, the nut butter, the honey, cocoa powder and almond extract in a mixer and mix well. Pour it into prepared pan and freeze.  Serve with Berries of your choice for extra treat.
